Poorer quality olive oils have more free acid and hence less desired.
When making soap the triglycerides in the oil are broken down to free
fatty acids that react with the alkali to make the soap if Sodoim
hydroxide is used the reaction is
Triglyceride = Water --->Free fatty acids + Sodium Hydroxide ---> Sodium
oleate(soap)
So free fatty acids are also converted to soap ie no disadvantage.
When I delve in the past when I was making soaps - I found potassium
hydroxide gave a better quality soap. Potassium Oleate rather than
sodium oleate.
