Composting olive pomace

<pre>Hello, my name is Dan Pattingale. I have been growing olives on Kangaroo Island
in South Australia since 1993, and have been producing olive oil since 1995.

As there are no facilities on the Island for extracting oil from olives, I have
had to take all our fruit to the mainland for processing. However, there is the
possibility that we may be setting up a small 2-phase mill for next year, which
means finding a suitable way to deal with the spent pomace. I would prefer to
compost the pomace for use as fertiliser in the orchard.

Can anyone advise me on where to get technical information regarding commercial
composting of this type of material?
