<pre>EVO shoud be well balanced in flavour. A green oil usually indicates an
early crush. I can remember sitting in the house of an estate inFlorence
with the manager, Maurizio Lambardi and Georgio Bertolini of the CNR
Scandicci - eating green olive oil with bread, cheese and red wine.
Getting back to the oil - one must look for fruitiness, bitterness and
pungency - but these must be in balance so that one of these does not
overpower the rest. Oils that are too bitter and pungent are best
blended with other oils.
