The Encyclopedia of Country Living by Carla Emery has a couple of recipes
within for extracting olive oil at home using kitchen methods. One involves
making a press from plywood and a car tire jack...the other is a grating,
boiling extraction process. I haven't had a chance to try either of these
yet since my olive trees are still too young to fruit. I highly recommend
her brine cured olive recipe in the same book, though. I pick a small amount
of fruit from trees in public areas and can't make enough of them!
