My name is Michael Sideris..I live in the Washington D.C. area..

You might be able to have olives shipped from California or Texas..go to
www.oliveoilsaurce.com for more info..

Best results for pressing olives is pressing them the same day you harvest..I
have known fellow villager who keep their olives about a week or so before going
to press..My experience olives start to ferment once harvested and quality
diminishes the longer you wait..You will probably have to put them in some kind
of water solution to keep them as fresh as possible...

If you are interested in trying a rare, unique extra virgin olive oil, go to
www.vordonia.com and read about my families olive oil..I would not mind sending
a sample bottle for you to taste and compare to the olive oil you might have on
hand or the oil you will press fresh.
