A press is the old way of extracting olive oil. Now, most modern plants use the decanter (centrifuge) to separate the solids from the liquid.

I suggest you should do ROI analysis. 2500 trees are not alot to dedicate a whole extracting line for. If you buy, I would suggest that you also consider processing olives for your neighbors and other farmers. That way, it becomes a more viable economically.

There are now many brands available.
