Processing my olives
Thanks for your feedback Sadoun. When I said 'press' I should have said extraction method. I wasn't thinking of an old fashioned press, but of one of the newer methods. I appreciate that it is not really an economic decision, putting in a plant to produce oil for a relatively small grove, but in Western Australia there are only a few processors who do pressing for outside customers, and they are geographically dispersed. Even rarer are organically certified processors. for me to put 'certified organic' on my labels, I have to use an approved press. I have had good advice from a local grower, and now need to look at the finances! Regards, Judith (chloeb)
