Hello,

You should start by finding out who in Jordan can certify your production as “organic”. There can be no organic products without proper certification! The company that will do this certification should provide you with the proper guidelines for organic olive oil production.

I have a very good friend in Jordan that studied with me in a Master on olive growing and olive oil technology in Spoleto/Italy. If you want I can put you in contact with him (just send me a personal message).
