I was away for a long time and miss talking with you all.

The subject is Olive to oil ratios

I produce a single verital extra virgin olive oil with a selve life of over 8 years.

My olive to oil ratio is 1 kilo of oil from 3 kilos of olives, which translates to 33.33 percent olive oil.

2000 I had a ratio of 1 kilo of oil from 2.25 kilos of olives,==40 percent oil.


My olive oil has a reputation of blowing the cork of the bottle if slightly over filled.
