After harvest time the questions and debate about the quality of the oil
rise anew - and chemical analyses are one of the answers to those
questions. Acidity certainly is one of the indicators which is well known
but there are others like perossidi, K, Kraiss, K230 and K3xxx. Our
problem is that we easily get information about the limits of those
measurements, i.e. the values they should have or should not exceed. But
what they actually measure and indicate about the oil - the proper meaning
of the
- numeri perossidi (number of peroxides),
- Delta Kappa, K,
- Kreiss,
- K230 and
- K232 (or other numbers) still remain rather unclear.
Who could give us more information on these indicators, in a laymens language?
