olive grove in Umbria) is now available from the Australian Olive Grower.

Last year we had 120 kg of oil from 800 kg of fresh olives. This
was about normal from us - just under 15% but we are picking early to
improve flavour. If we left them anyother couple of weeks we could expect a
slight increase in oil percentage and oil yield - perhaps as much as 1%.
After this the oil percentage would continue to rise but the yield would
drop with increasing fruit fall.
