<pre>Further to Stan's comments re temperature. Our winters in central Victoria
get quite cold and my processing facility is about 2000 square metres. 18
inch brick walls and 12 inch concrete ceiling. I found it necessary to
install a Jetfire industrial heater to raise the temperature to 23-25
degrees (paste temp).

Another thing one has to watch with the Oliomio is the hammer mill - I
suggest you keep a spare. If any stones etc get through the washing process
the grid just isn't up to sustained battering. I went through two last
year. Mine is a 100 altho I have used a 50. The drive belts etc seem to be
lasting quite well after 2 seasons and perhaps 30 tonne of fruit.

I don't know what changes have been made to the machine that you have but I
found it convenient to extend the two drain cocks to the front of the
machine (clear poly pipe) so that monitoring is more convenient.

Just while we are on this subject I wonder how many Oliomio's in Oz are
housed in approved Health department premises? As far as I know I am the
only one in Victoria. The expense involved in having such premises is
considerable quite apart from being desirable.

And Mike, make sure you have suitable storage facilities. This is critical!
If the co-op can afford it move straight to stainless steel with a floating
seal. If you can do a nitrogen injection even better. At the very least
get coated 44 gallon food grade steel drums that have been coated
internally.
