Could our USA members give me the names and contact details of table
olive processors in your district or any where else in the US (if you
know)

I am also interested in the same information from

In answer to your inquiry about table olive processors in California
(U.S.), there are only two major black ripe processors remaining. Musco
Olive Products, Tracy, California; and Bell Carter Olive Company, Corning,
California.

For contact: Musco Olive Products: 209-836-4600
Bell Carter Olive Company: 530-824-2901

There are also smaller specialty table olive processors including Armstrong
Olive Company, West Coast Products, Della Casa Foods, Adams Ranch, all of
which process the naturally fermented Sicilian style green olive. These
processors are much smaller than the two black ripe olive processors.

The information that you sent me is very useful. Would you have postal
addresses or Fax Numbers?

Regarding the Australian Table Olive Production Manual in the first run
we will concentrate on 5 methods.

¥ Spanish Green - Lye Treated
¥ Greek/Sicilian Untreated (No Lye) Green naturally fermented
¥ Greek Style Untreated (No Lye) Black naturally ripe - eg Kalamata,
Volos
¥ Californian treated Black - Lye/Artificially coloured by aeration
¥ Shrivelled Naturally Black Ripe

Please comment you and others on the line

I can supply telephone, fax numbers and addresses. Now all I have to do is
remember whose names I sent you. If my memory serves me correctly, the
names of the black ripe olive processing companies were Musco Olive
Products and Bell Carter Foods. Following is the information:

Also I would like to be in contact with small scale producers of table
olives. can you suggest 3 or 4 names or groups?

Dear Stan:
Sorry for the delay responding to your letter. Out of town at a national
bargaining conference and when I returned, the number of e-mail messages
was staggering.

To answer your questions. No problem with mentioning my name.
Second, our organization is a cooperative bargaining association which
simply means we attempt to gather together as many member growers as
possible to meet with processors for the purpose of negotiating prices paid
for table olives being purchased. It's not easy for two reasons: First,
many growers are not members. Therefore, they get a free ride because the
prices we negotiate are the market prices paid all growers in California
for their olives. Second, we have experienced severe consolidation of
processors (only two majors left). Now the smaller growers are in harms way
because in years of large crops, the little guys have no home.

The varieties we deal with for table purposes are, in order of importance:
Manzanillo, Sevillano, Ascolano, Mission and Barouni. There are a
significant number of small growers that we represent through our
association. Let me know what you need. I'm sure we can be of help.

Trudy,

You may well be right and table olives may not be in over supply. I
hope so. The situation at Mt Compass may be different from the national
picture. I do not have up to date figures on what the consumptiom of
table olives is in Oz. Some old PISA figures showed it was 8,700 tonne
in 1993 and rising by about 500 tonnes a year. Perhaps 12,000 tonne?
I'm sure some one has more accurate figures. Production in 1995 was
2,500 tonne. What is a reasonable share of the market? Imports will
always take a big part - once local production gets over 50% the
competion will get tough. That leaves 3,500 tonne. The 1995
production came from 2,000 ha. I am sure those 2,000 ha are producing a
heap more by now and there must be more than 2,000 ha of new planting.
All guesswork but there must be some better guesses out there.

Table Olives

Unlike Oil olives, there is a good fall back position with Table olives.
If you plant Kalamata then you will get (as I understand it) a
reasonable oil level and one which the Greeks among us will surely
enjoy.

On Koukanaries (?sp) beach on Skiathios, the blokes selling the salads
always put in a generous pinch or two of dried oregano...
