protein content of olive oil

<table border=0 cellpadding=2 cellspacing="0"><tr><td>
<pre>There is a paper published by Georgalaki et al (1998)in the Journal of the
American Oil Chemists Society (volume 75, 155-159)which confirms the
presence of protein in virgin olive oil. At least two enzymes, lipoxygenase
and polyphenol oxidase, were detected. I am sure there are other proteins
as well. It is not surprising because some proteins have fatty parts which
may increase their solubility in fats. It is just a question of how hard
one looks.

Re: protein content of olive oil

<pre>I was interested to hear about the research paper on proteins (enzymes)
in olive oil. If any of the "Parea" that is us alveoli yahoos has a copy
handy could they post to Pr Stan Kailis University of WA, 35 Stirling
Highway, Crawley WA 6009 or fax to 9380 1108.

Now the topic of Parea - I can identify this and certainly getting on
line to the group gives me the same feeling as when I sit in the
harbourside Tavernas with my friends on my Island of Kastelorrizo (Means
red castle in Italian I think, though it is the furthermost Greek
Island) drinking Greek coffee (beats the Espresso in Italy) -
Kastelorrizo's Greek name is Megisti and I hope Alexander P has asked
the brotherhood if he can commercialise the name.

Regarding Roger's reminisces - I too can remember the waiter and his
mate. Firstly I asked for 2 white coffees (in Greek). The waiter said
that is impossible because he had no white coffee. I then asked for
coffee with milk - he said sarcastically oh - cafe au lait - when his
mate brought the coffee on the tray he had to cross the busy Athens
traffic and when he put it down on the table he said look the coffee is
light brown (kafe in Greek). You cannot beat these Greeks, they either
have a word for it or the have the last word. What can you say.

Cheers
