How long should I expect it to take for my freshly pressed oil to settle and
clear?

<pre>Mike,
Much depends on the cultivar, and the ripeness at pressing.

Fir instance, if the fruit were Manzanillo (or other table/multipurpose
cv) it is likely that there will be a longer time to settle to clear.
(In fact, we have some of last season's Manz oil which still has
suspended solids - and some waxy looking "dots" - in it).

If the fruit were VERY ripe, I'd suggest that the likelihood of solids
remaining in suspension is greater. (both of these comments are the
result of observation, not empirical scientific measurement).

I'd be inclined to decant into clean containers after 2-3 months and
allow the "sludge" to settle further (or have it for personal use - it
is not illegal, is it? ;-) ).
