Can anyone tell me when is the best for early harvest.

I am writing from Turkey and the word early harvest is not that familiar to
olive grovers yet. What I intend to do this season is an early harvest, however
I do not have healthy figures for estimating the right time.

For Spain, Italy, Greece and Syria what times are the best for an early harvest.

I assume that it mostly depends on the olive variety and climate etc. but is it
not possible to get an idea from the ripeness of the fruit. How can I measure
the right time from the fruit itself ?
