Oil from Olive Stone

<pre>Hello Olive Friends

Last week we have been at the Verona Fiera "Vinitaly", where we informed us
about different olive oil mills. There are systems, that crush the stones
(which was up to now the normal system to us) and others where the stones
remain whole. We were told, that scientific studies proof the better
qualitiy of stoneless oil (the stone contains 3 different kinds of
"poisonous" substances, tannic, glucoside and the fat of the central part).
Furthermore the quantity of oil would be higher (2 percent), they said,
because the wood of the crushed stone absorbes some of the oil.

Now, we are wondering about your opinions. Which system seems to be better
to you, and for what reasons? Do you know any study and literature about
the stone problem?

<pre>I have come across this take the pits out first system, here in California.
An Italian fellow calls it The Integrale System. It works fine; I do not know
of much literature on the subject. Over.
