<pre>Souhair, We had many friends in Syria who cooked traditional dishes for us and yes they were different to the restaurant fare. We did enjoy however the breaking of the fast after Ramadan (Eid) when restaurants would serve a much wider range of dishes than normal. Our friends told us that many of the Syrian dishes were very time consuming - kebbeh made properly is very labour intensive I believe - and perhaps was in danger of dying out because of that. Back in the 60s when the book was produced there were very few cookbooks available on the subject in English. Check the credits for my maiden name, Kaye Neil. I was the picture editor and planned and edited all the photography, with incredible help from Rome Bureau correspondent Ann Natanson and correspondents in other Middle East Bureaus as well as Time-Life stringers in the various Middle Eastern countries where we didn't have bureaus. I called the editing, "slaving over a hot light table." Location photographer David Lees took some 70,000 pictures over six weeks and studio photographer Dick Jeffery another 1,000, all winnowed down to some 135 pictures published in the book. However, Lee's step-by-step photography of cooking on location enabled us to fully understand techniques. I think the recipes still stand up, even though more Middle Eastern ingredients are now available to us world wide, and later writers, whom I am quoting in my posts, have delved more deeply into the various cuisines. I was also picture editor of Quintet of Cuisines in the same Foods of the World series, which covered North Africa: Morocco, Tunisia and Algeria. Therefore my interest in those cuisines as well. It seems to be quite a lot of money and deserves some financial analysis beside the technical advantage over cold pressing . here is the final version for the Raw Kibbee (4 servings) 1 kg Round steak or lamb ( 'Habra" , that is the part that is 100% red meat.. absolutely no white fat in it.) 3/4 c Fine bulgar 1 Green onion Salt ,Cumin (or special Kibbeh Nayyeh spice mix of Aleppo red pepper (fleefla halabiyya) , pepper , cinnamon , hot cayenne pepper , dried mint leaves than can be obtained from most Middle Eastern speciality stores. ) Olive oil Put bulgar in a bowl and cover with warm water. The water should cover the bulgar and be about 2 cms above the bulgar. Let soak until water is absorbed and bulgar is soft.(about 1/2 hour) Remove all fat and membranes from meat ( I prefer lamb ) and grind twice. ( it is better grounded by hands not a food processor ) Combine meat, bulgar, cumin, salt , other spices , chopped parsley and one chopped (finely chopped) green onion . Mix by hand until thoroughly mixed ( smash it on a marble slab ). Pat kibbee onto a serving platter and chill well . Remove just before serving . Make a hole in middle of kibbee and fill with olive oil , garnish with parsley . Serve with pita bread. Some people make it with eggs ( Like the French Steak Tartar ) Isn't the Kibbeh Nayyeh health hazardous? Yes and no. If you grew up in the West and end up with dirty meat, E-Coli (a bacteria found in fecal matter) can make you very sick and even kill you. If you grew up near souq el-hamidiyyeh in Damascus drinking the 3irq-sus ( liquorice )from that guy who carries the tank on his back, or eating buza (ice cream ) or almost anything from public places, YOU can make E-coli very sick.:-) If you eat the Halabi (Aleppo's) Kibbeh Nayyeh, it's not the E-coli that will kill you, it's the HOT peppers :-)) Joking aside, the important thing is to make sure the meat is aged and fresh, and that you eat it the day you bring it home. We have irrigation from a local irrigation scheme.. Like most people North of Taupo we have experienced problems with the Barnea with root rot and low fruit bearing. There is no doubt that the Barnea does not like any humidity and/or too much rain. Incidentally our grove is on very deep volcanic loam soil which drains extremely well however that has not stopped the root rot problem. We are probably going to have to make the decision of pulling them out at the end of May 2000 if things don't improve. All the evidence I can get and having spoken to some growers in australia it appears that they need a frost as well. Re the price of the cold pressed extra virgin oil from marlborough olives. I visited their grove and pressing room late last year. They have done a superb PR and marketing job and have probably done more than anyone else in NZ to help promote olive awareness and plantings etc.They have achieved some truly amazing prices for some of their oil HOWEVER it must be stated that these prices are retail and not wholesale and tend to be ex- grove sales. Marlborough is a high profile tourist destination in NZ and as I said they have marketed their set-up extremely well. I bought a 500ml bottle when I was down there for (I think) $25.00 or $40 if I bought a litre bottle. It was certainly one of the best oils I have tasted anywhere in the world. I regularly travel to california, Vancouver, New york, UK and france and spain on business and always try and spend some time talking to or visiting olive oil people or places etc. It had a really fabulous nutty/grassy taste and a brilliant colour. Many of the property sales agents are touting NZ$40.00 a litre return for all oil produced in the future. i believe this to be rubbish. Most growers will probably only receive $15 -20 max for their oil UNLESS they start to market their product well before they start producing in any great bulk. That is what Marlborough and several others have done. I recall reading in Australia that some guruh has advised that the best way is to promote a single regional brand with each individual growers label attached as the secondary brand. Anyone any comments on that idea? Cette culture, essentielle dans l'économie syrienne, ne se limite plus aux régions traditionnelles : Alep et Idleb (nord du pays), Tartous et Lattaquié (côte), la Ghouta de Damas et l'oasis de Palmyre (sud). Aujourd'hui on cultive les oliviers partout en Syrie offrant ainsi une plus grande variété de genres d'olives et élevant la superficie plantée d'oliviers à /435.5/ mille hectares plantés de /57/ millions d'oliviers dont /32/ millions sont en âge de production. Ainsi, la plantation des oliviers en Syrie est répartie comme suit: Nord et côte : Zones traditionnelles. Centre et sud, à l'exception de la Ghouta de Damas et de l'oasis de Palmyre : Zones d'extension. Est : plantation débutante. La production de la Syrie en olives en 1996 a atteint le chiffre de /650/ mille tonnes avec une augmentation de /553%/ par rapport l'an 1971 (117 mille tonnes). L'évolution de la culture d'oliviers a entraþîné une augmentation du nombre des pressoirs et de la production de l'huile. En effet, la production de la Syrie en huile d'olive s'est chiffrée dans l'annþée 1996 à 125 mille tonnes, augmentant ainsi de 657% depuis l'année 1971 (19 mille tonnes). Le nombre des pressoirs en 1996 était de /751/. Leur capacité de production est de 8543 tonnes/jour. Ces installations comprennent /24/ unités qui produisent entre huit et 15 mille tonnes d'huile industrielle. En 1980, le ministère de l'agriculture et de la réforme agraire a créé une administration centrale (bureau de l'olive) chargée de veiller sur le développement et l'amélioration de cette culture en assurant aux planteurs la technologie moderne et les informations sur les dernières études et recherches la concernant. Ce bureau collabore dans ce but avec les différentes administrations spécialisées dans le pays, ainsi qu'avec les organisations arabes et internationales concernées.
