Judy Ridgway, processing and lots more at Olive Business 2001

<pre>Organisers of Olive Business 2001 are delighted to inform you that Judy Ridgway will be our international guest personality in Melbourne, Australia, in May this year. Judy has undertaken to speak at the Oil Makers' and Pickler's dinner, leading the discussion on the differing attributes of the pungent and softer olive oils. At the conference on olive oil processing she will speak on consumer requirements. Judy will also conduct a tutored tasting for leading chefs and distributors - as well as being available to provide comments on Australian and New Zealand extra virgin olive oils showcased in The Olive Market Place. The 'Getting the Most Out of Your Processor' conference brings together some of Australia's leading processors and scientists to discuss the status of processing in Australia and its successes, challenges and investment opportunities. We have commitment from three distributors of smaller olive oil processing machines to run olive pressing demonstrations in the Olive Business Centre. Other displays will cover products and services at all the stages of the olive demand/supply chain. The Olive Marketplace will showcase Australian and New Zealand Olive products, supported by independent and proprietary tastings and cooking demonstrations. New Zealand entries to the Olive Business Extra Virgin Olive Oil and Table Olive Awards are welcomed for the first time. New classes have been included for the more pungent and softer oils, new season oils and organic oils and table olives. The presentation dinner will be another occasion for good food, wine and fun - and I suspect some trans-Tasman rivalry - and revelry! Seminars will cover topics such as Food Safety Requirements, Getting your Olive Products into the Marketplace, Organic Olive Production, Medium and Large Scale Harvesting, and Processing Boutique Table Olives. The event will be held in Melbourne under cover at the Showgrounds Exhibition Centre from 17-20 May 2001. Promotions of participating suppliers' olive products will take place in restaurants and through retail outlets during the week prior and following the Olive Business 2001 Conference and Expo.
