Plastic containers

Has anybody had any problems with storing olives in
brine in large plastic containers? We have a number of 20litre containers with a
bottom spout which would be ideal for draining off the brine for replenishment
but were not sure whether the plastic would impart any bad flavours to the
olives over time.

I use plastic 20l containers for storing oil and have no problems even over
12 months.
My supplier tells me these are specially made for olives and are
polypropelyne. They are different from the ones used for water and are not
as brittle

The suitability would be very much dependent on the prior use(s) to
which the containers were put. We attempted to use a larger container
that had been used to import pickled peppers in. Even after significant
effort in scrubbing, scouring and scalding, the iloves pickled in this
container still had a slight taint of peppers.

I guess the moral of this story is BE very AWARE of the provenance of
your pickling containers.

That said, If the containers are new and of food grade plastic, there
should be absolutely no problem. The bottom line is that the plastic
will rarely give flavours to the olives, the previous contents might!
