olive oil cake competition

<pre>John Thanks for your enthusiastic response. The recipe for the olive oil cake competition, as printed in the Show book is - 7 eggs (separated), 1 cup superfine castor sugar, 425 ml extra virgin olive oil, 1 cup self raising flour (sifted), one and a quarter cups drinking chocolate (not cocoa) (sifted), 125 ml warm water. ( quarter cup sugar when beating egg whites). Preheat oven to 180C. Beat egg yolks with castor sugar until fluffy. If the mixture tends to be thick add 1 tsp warm water - this will help the mixture to turn fluffy again. With the beater on medium speed add extra virgin olive oil, bit by bit, like making mayonnaise. Add dry ingredients to the mixture on low speed and beat until all combined. Add the water. Whip the egg whites until thick, add the sugar and beat until it dissolves. Pour the chocolate mixture into a large bowl and gently but swiftly fold in the egg whites. When all combined pour into a greased 23 cm cake tin and bake for 1 hour until cooked. I claim no expertise in cake cooking and I am keen to see how this competition goes. My wife tells me that the recipe is a bit difficult so it should be a good one for a competition. There are a surprising number of olive oil cake recipes around when you start looking for them.
