How many trees are you planting and how long are the rows? If its only a small grove of about 400 tree I tend to just spot plant the pollinators so that there is one pollinator within 20m of every other tree, with a bias of more pollinators on the side closest to the prevailing wind in spring - in my case the west. If the rows are 40 or so trees long and you have 1000 or more trees, I plant an entire row of several varieties, as this tends to make harvesting a bit easier. With the small scale grove they all go into the same pot (for oil) so I don't worry about selective harvesting. Once you get up to having 40 or more of a different variety, its well worth thinking about the future and the time you will have a tonne of olives from a different variety.
