I hope someone on here can help me. I will be hopefully planting 92 new trees in the next couple of weeks but I'm still very uncertain as to what to buy. My dilemma will take a fair bit of description so if it's OK, I'll wait to see if anyone responds first.

You shuld go for the traditional varieties of catalonia, i.e. Arbequina and Arbossana.

Thanks for replying. Unfortunately I posted this question over 5 weeks ago and your's is the first reply I've had so I had to use my own judgement in the end. The three main choices round here were Arbequina, Piqual and Morrut. Although the Arbequina are fast growing, they have small fruit which makes machine harvesting difficult. The Morrut have larger fruit but take a long time to fruit. In the end, I went for the Piqual as it is in the middle for time and size. I bought and planted 92, one year old trees that were raised by nebulisation as I could not afford the grafted type.

This is what I mean. The plant is produced by "grafting" a cutting onto the root stock of another variety.
The other picture shows the type I bought which are cuttings raised in a warm misty environment.

I have a small olive tree nursery in Portugal, so that why i'm interested in this matter.

My question was more if you knew who they produced these plants and what is the rootstock they're using. In Italy they use plants otained by seed, that on the second year are grafted with the variety that they want to produce.

Here our main variety, "Galega vulgar", is impossible to produce from cuttings, so i've been looking for a solution to produce these plants. The italian method is to expensive for the selling price the plants have in portugal. So i was wondering if you had any clues.
