absorb ultraviolet light in certain regions of the ultraviolet spectrum
(232 and 270nm). An increase in these K values can indicate that an oil
has been refined, or contains some refined oil, even though it is claimed
to be extra virgin. These measurements can also be used to detect adulterants.

This examination in the ultraviolet can provide information on the
quality of a fat, its state of preservation and changes brought about
in it by technological processes.
