browning of the flesh

I have a sample of some olives which I think are coregiola. The fruit is
about 20mm long and about 14mm diameter. It is a pale green colour with
a tinge of yellowing on some of the fruit as if they are about to ripen.
The shape is sort of roundish. This discription given because I am not
sure of the cultivar.

When we cut open some of the fruit there is a brown area in the flesh
near to the stone. I am trying to find out what causes this browning.

Any suggestions
