Analytical parameters

I am a new member and have just returned from a trip from southern
Italy, where I got the first time really in touch with olive oil and
I am fascinated about this material. By looking for more information
in the internet I dropped on this newsgroup and find it very
interesting.

I have now a question concerning analytical data. I have bought four
different olive oils all sold as cold pressed and have analysed them
in the lab I work. I found acidity values of between 0.3 and 1.0. Can
you say that all these oils were really cold pressed? I also have
analysed the iodine value and found it to be similar for all of them
(between 79 and 83). Do they tell me something about the quality of
the oil? What other parameter is important to measure?
