We press nut oils and what we do is gas flush the air out of the containers. That way you do not have air contact it is an inert gas instead. Oil will last 12 - 14 months longer stored flushed and in our cool room. Why don't you guys use this with olive oils? If I can find a way to get hold of Nitrogen (would Carbon Dioxide be better as it is heavier?) in small, handy to use containers I will give this a whirl. Has anybody come across small scale containers of Nitrogen for this purpose? I don't intend renting one of those 100 litre type things they use in commercial applications unless there is no other option. Regards, Mike. </pre> </td></tr></table> |

Hi Mike You dont want CO2 as it can still cause oxidation. Nitrogen is readily available in food grade quality in a ''D'' size cylinder (1,400 litres gas) or an "E" size (3,500 litres). If finances are tight "D" size is $35 plus rental, you can hire them by the day at 28c. "D" size is about knee height. You test the air above the oil with an oxygen meter, no oxygen = all nitrogen. I think these maters can be hired. </pre> </td></tr></table> |

I have solved the problem for this year and now have plenty of ammunition ready for next season. Again, my thanks to the members of this list for your helpful advice.
