There are a number of references, but for a summary (and list of relevant
references) see:
Kiritsakis, A.K. (Ed) (1991) Olive Oil, (published by American Oil
Chemists' Society, Champaign, Illinois.
Especially chapter 14.

This book really is worth getting.
