Quality indicators

<table border=0 cellpadding=2 cellspacing="0"><tr><td>
<pre>Dear collegues

After harvest time the questions and debate about the quality of the oil
rise anew - and chemical analyses are one of the answers to those
questions. Acidity certainly is one of the indicators which is well known
but there are others like perossidi, K, Kraiss, K230 and K3xxx. Our
problem is that we easily get information about the limits of those
measurements, i.e. the values they should have or should not exceed. But
what they actually measure and indicate about the oil - the proper meaning
of the

- numeri perossidi (number of peroxides),
- Delta Kappa, K,
- Kreiss,
- K230 and
- K232 (or other numbers) still remain rather unclear.

Who could give us more information on these indicators, in a laymens language?

Kind regards
Daniela and Hanna

<pre>I'm a chemist, but not a food chemist. Unsaturated fatty acids, like thise
in olive oil can form peroxides by reacting with oxygen. Light can
accelerate this reaction. These (peroxides) contribute to rancidity
associated with "old" oils. Don't know the meaning of the other measurements.

Quality indicators

<table border=0 cellpadding=2 cellspacing="0"><tr><td>
<pre>Attention olive oil producers

Are you interested in rapid methods to assess the quality of your product?

Are you using old fashioned methods that take time and use large quantities
of organic solvents?

If you want to measure:

Hydroperoxide
Free fatty acid
Malenoaldehyde
Alkenals

Consider the DiaMed range of F.A.T.S. kits.

The kits are also suitable for other pressed and nutritional oils.

Contact me for further details.

<pre>Dear Mr. Kallis,

Thank you for your reply.

I attach 2 word files which explain a little of the philosophy behind our
system and some information on our company.

I guess from your e-mail address that you are in Australia. If you would
confirm this, I will contact our distributor, DiaMed Australia, to put them
in touch with you.

Best regards
