Olive Oil tasting

<pre>My underastanding is that Australia now has one IOOC accredited panel for olive
oil tasting.

We in WA are working towards a panel at the University of WA. Early in the
developments some olive growers approached the University regarding setting up a
panel independent of the AOA or any other olive body. The UWA panel will be a
trade panel assessing olive oils to IOOC standards. This panel will also develop
and assess the organoleptic characteristics of other edible oils including cold
pressed Canola and Grape seed oils.

IOOC panels need a trained chairperson - Richard Gawel is the current chair.
Members of the panel need to be selected against criteria set by the IOOC.
Initially a panel is informal. It is the panel not the chair or members that is
accredited. This is done by a ring test of 3 test oils sent out by the IOOC.
Successful evaluation gives the panel its accreditation for one year.

In Western Australia 2 Olive Oil Tasters schools have been conducted by UWA -
there is now a pool of people that have had training but have not been subjected
to selection. From this group a number have been invited by th WA Olive Council
to judge thePerth Royal Show Oils. The legal responsibility for the outcomes of
this group are a matter for the WA Olive Council and the Perth Royal Show
Management. The UWA panel is not part of this process.

An individual from an accredited panel has no IOOC status outside an accredited
panel.

I hope this clarifies responsibilities.
