<pre>Hey...I am new to the list and wanted for some of you to tell me your
favorite olive oils and why you like them so I can get them and try
them.

Personally, my favorite one right now is Olio Verde...of all the ones I
have tried I seem to like fruity ones the best (fruity is about he only
taste I can sense right now - I am fairly new to tasting olive oils - I
can also sense bitterness - I think).

..anyways your input is appreciated

<pre>EVO shoud be well balanced in flavour. A green oil usually indicates an
early crush. I can remember sitting in the house of an estate inFlorence
with the manager, Maurizio Lambardi and Georgio Bertolini of the CNR
Scandicci - eating green olive oil with bread, cheese and red wine.

Getting back to the oil - one must look for fruitiness, bitterness and
pungency - but these must be in balance so that one of these does not
overpower the rest. Oils that are too bitter and pungent are best
blended with other oils.
