<pre>This carton is made from plastic, not cardbard, according to the original NY Times story. The point is to cut down on light and oxygen affecting the oil. That the rectangular plastic cartons are lighter and less expenaive to ship may make this a wave or the future for less expensive oil. If it becomes popular, we'll undoubtedly have studies on the transfer of plastic compounds to the oil, though I don't think this is likely as the oil is not heated on the container and plastic jugs have long been used for other oils. Before good olive oil became widely available in the U.S., I used to go to Little Italy in NYC to buy olive oil in rectangular gallon metal cans, then transfer it to empty cognac bottles.
