Taste of the oil

<pre>The oil from Crete that I have tasted was terrific. It came from the govt research centre. The Ligurian oil is mild and must be used very quickly - less than one year. I am surprised that the Tuscan oil was also mild. If you want to try some oil with a real kick - peppery, spicey etc. - get some from the high country of Umbria.
