Is olive oil mainly from the pits or from the flesh of the fruit? I

Hi Remco,

Olive oil is mainly from the flesh and not the pits. Pits usually
contain about 2-4% of the oil content of the olive. 96-98% of the
oil comes from the flesh.

Not all olive varieties (there are around 600 varieties in the
world) yield the same amount of oil. Some olives are basically
for canning or pickling only since it contains very little oil (about
6-8% of gross weight). Other olive varieties like the Mission and
the Surri contain a higher percentage up to 35% in some cases
depending on the soil, year, and harvest time.

Good afternoon,
I wonder if you may be able to help me.
I have seen your site on Yahoo and I am in need of some help in identifying
the constituents of Olive oil absolute. I am Steve Meakins and I work as a
product safety officer for Quest International, a fragrance and flavour
producer. One of our perfumers would like to use olive oil absolute but
before I will allow it to be used in consumer products I need to know what
the constituents of this material are. As it is an alcohol extract it will
obviously contain little of the glycerides, but I am having difficulty
finding out what it is composed of. I was hoping that some one in your
group may have such data, or could point me in the right direction to find
it.

I would appreciate any help you can give.
